Alaskan Snowballs
Prep time: 20 minutes
No Baking
2 cups graham cracker crumbs
1/2 cup chopped almonds
1/2 cup dark raisins
3/4 cup confectioners' sugar
1/3 cup brandy or orange juice
1/4 cup honey
2 tablespoons unsweetened cocoa powder
1/2 cup shredded sweetened coconut
In a blender or food processor fitted with the metal blade,
combine graham cracker crumbs, almonds, and raisins. Process
until finely ground.
Add confectioners' sugar, brandy, honey, and cocoa. Process
until mixture forms a thick paste.
Spread coconut on a flat surface. Line a large baking sheet with
waxed paper.
Shape graham cracker mixture into 1-inch balls; roll in coconut.
Place snowballs on prepared baking sheet. Let stand at room
temperature for at least 2 hours before serving.
Prepare in Advance: These no bake cookies are easy to prepare
and ideal to make ahead because their taste improves as they
sit. For the best flavor, prepare snowballs as recipe directs
and store them in an airtight container for up to 3 days.
